This is another recipe that my boys wanted me to make for them. I wasn't sure about it at first but turns out it was pretty simple and really good. Here is my version of a chicken Parmesan recipe I found online. Ingredients:

    • 4 chicken breast (pounded out thin)
    • 2 eggs
    • 1/2 c. milk
    • Italian bread crumbs
    • 1 jar marinara sauce
    • sliced cheese (Provolone, Mozzarella)
    • pasta (spaghetti, angel hair, fettuccine etc.)

Pound out your chicken breasts to about 1/2 inch or so. Mix together the eggs and milk. Place bread crumbs into a bowl. (I had to use my ice cream scoop; couldn't find the meat mallet)

Dip chicken into egg/milk mixture and then into bread crumbs. Place into a heated pan and fry until golden brown. Then place on sheet pan. Cover with a small amount of marinara sauce. And place into a 350 degree preheated oven for about 20 minutes until it begins to bubble.

Just before you pull the chicken out of the oven place a slice of Provolone cheese on each piece of chicken and return to oven until melted.

Place chicken on top of your pasta of choice and serve with French bread or garlic toast.
