A few weeks ago a couple of co-workers sent me a recipe they wanted me to make so they could try it. I've been making baked goods and bringing them to the office so I'm now the 'official baker' around here I suppose. Anyway, the recipe they sent looked easy enough so I gave it shot and the result was...a most delicious keeper. Mini S'mores Poppers.

It takes a little bit of time with cooling and all but the recipe is only 5 ingredients so it's really simple to do.

You will need
· 6tsp. of butter
· 1/4 c. powdered sugar
· 7 full sized graham crackers
· 4 chocolate bars
· 12 large marshmallows
· A mini-muffin pan.

Preheat your oven to 350 degrees.

Crush your 7 graham crackers up into fine crumbs and pour into a mixing bowl, add your 1/4 c. powdered sugar, melt your butter and pour into the crumb mixture. Mix well with a fork.

Place a spoonful of the crumb mixture into the muffin tin and press down to make the cups. Then place in the oven for about 5 minutes. The edges will begin to bubble.

While that is baking take 2 of your candy bars and break into the rectangles and cut your large marshmallows in half.

When your graham cracker cups have finished baking pull from oven and let cool for a couple of minutes. Then place 1 rectangle of chocolate in each cup along with a 1/2 of a marshmallow. Place the cut side of the marshmallow down. Place them back in the oven for about 2 minutes or until the marshmallows soften.

Pull from oven and let cool for a good 15-20 minutes (let them set up good). Then remove from muffin tin and let cool completely. It took mine another 30 minutes or so.

Take your last 2 chocolate bars and place in a microwaveable bowl and melt the chocolate. Then dip the tops of your cooled poppers into the chocolate and let set.

They are now ready to 'pop' into your mouth. Now, having given you the 'proper' way to make these, if you are a rebel like me,  I didn't allow them to really cool all the way. I sampled one while warm and I have to say it was a little bite of heaven and I didn't feel one bit of guilt!!
