Turtle Cookie Bars – Shay’s Recipe of the Week
I debated this week on posting another chicken recipe or going with a dessert. Everyone here at the station decided I needed to post a dessert, mainly because they get to sample what I make. So a dessert it is. This one is good and super easy to make.
Ingredients:
Crust:
- 2 c. flour
- 1 c. brown sugar (packed)
- 1/2 c. (1 stick) butter, softened
2nd Layer:
- 1/2 c. brown sugar (packed)
- 1 c. pecans (chopped)
- 2/3 c. butter
- 1 c. milk chocolate chips
Preheat oven to 350 degrees. Combine ingredients for crust in a mixing bowl, mix until blended well.
Pat mixture into an ungreased 9x13 pan.
Scatter pecans over crust.
Combine the 2/3 cup butter, 1/2 c. brown sugar in a saucepan and bring to a boil. Stir constantly for 3 minutes. Remove from heat and pour over the pecans. Place in oven and bake about 15 minutes or until bubbly.
Remove from oven and sprinkle the chocolate chips over the top and let melt. Cool until room temperature. Cut into squares and enjoy!
These are pretty good, however, I was a little deceived by the name 'turtle cookie bars'. To me 'turtle' would suggest some kind of caramel in it. So the next time I make them I will probably melt some caramel squares and drizzles on top of the chocolate.
