
Chile Relleno Meatballs For Your Mouth
Okay, so this entire article is dedicated to how good my mom's food is. Specifically one thing she made the other day that I can't stop thinking about, and she said she would make it again so I am really REALLY hoping she does. If not, I am kicking her out of my house.
I could just make it myself, I have the recipe and everything but my mom doesn't pay rent so if she ain't cookin', she ain't stayin'!
Mexican Italian Cuisine Straight From Heaven
Alright, so you're probably wondering what the hell my mom made that is so delicious I would threaten to kick her out of my home for not making them again, right?
Meatballs. But not your run of the mill, regular ole Swedish meatballs, or a basic b**** meatball you'd roll up and toss in your plain spaghetti with unseasoned Ragu.
No, no, no. My mother made Chile Relleno Meatballs, with a little exploding pocket of cheese hidden inside and even still battered and fried and oven baked just to be sure.
OH AND THERE IS A SAUCE TOO!!
How Did My Mom Come Up With Chile Relleno Meatballs?
Long story short: She did not. I was doom scrolling on Facebook reels and Mark Zuckerberg blessed my algorithm with the most delicious looking balls of meat my mouth ever watered over.
So of course, I sent this to my mom and she thought they looked so good she decided to make them the very same day! I didn't expect it and I feel like it made the meatballs that much better, because they were a surprise filled with a mother's love.
I doubt you would be able to make them as good as she can, but here is the recipe anyway. Good luck, El Paso!
