Crock Pot Chicken N’ Dumplings – Shay’s Recipe of the Week
I love chicken n' dumplings although I had never made them myself. I decided, over the weekend, to pull out the ole crock pot and give it a whirl. I have to say they were some darn good chicken n' dumplings. Here's what I did so you can make a batch for your family. It's great comfort food.
Ingredients:
- 4 chicken breast (I cubed mine)
- 3 Tbls. butter
- 2 cans cream of chicken soup
- 1 lg. box (2 lbs) chicken broth
- 1 onion chopped
- 2 tsp. parsley flakes
- 1 tsp. cumin
- 1 tsp. celery salt
- 1 tsp. sea salt
- course ground pepper to taste
- 2 lg. cans biscuits (or make from scratch-I made Bisquick biscuit dough)
I cubed my chicken but it can be left whole if you prefer. Dump all of the ingredients into a large crock pot on high. Let cook for about 2 hours on high, then turn to medium for the next couple of hours.
Turn back to high and add in your dumplings. (You may have to add in a little water or more broth to accommodate your dumplings, I added about 2 more cups of broth to mine) You can make these from scratch as I did or you can use the canned biscuits and tear them into small pieces. Place them in the crock pot and make sure they are covered so they cook through. I cooked mine about 45 minutes; just make sure your dough is cooked.
This will make a good 8-10 servings. This has great flavor and I was even paid a complement by my 14 year old, "this is better than Cracker Barrels chicken n' dumplings"...now that's some good chicken n' dumplings.
