Bacon Wrapped, Cream Cheese Stuffed Chicken – Shay’s Recipe of the Week
The recipe is really simple and delicious and the whole family loved it. You'll need:
- package of bacon
- 8 oz. pkg of cream cheese
- can of chopped green chilies
- sliced cheese of your choice (pepper jack is great)
- package of small chicken breast
Pound your chicken breasts to about 1 inch thickness. Lay 4 strips of bacon criss-cross style on cutting board and place your chicken on top. Smooth on a layer of cream cheese, add a teaspoon or so of green chilies and a slice of cheese. Then wrap the bacon around and place in a lightly greased baking dish. Salt and pepper to taste.
Bake 45 minutes to an hour at 350 degrees, or until juices are clear and bacon is crisp.
Serve with sides of your choosing and I guarantee your family will be asking for this again and again!
