Most of us saw a little snowfall in the Abilene area this week. Now, this is what I'm talking about. It's about time we see some more seasonable weather. With all the record-high temperatures we've been hitting lately, I was starting to wonder if winter was going to show up at all. And after the roasting summer we had, it's nice to have a cooldown.

When wintry weather strikes, almost nothing soothes quite like cold -weather food. You know, the kind that warms you up from the inside out. Many folks go straight for the soups. Others like something a little heartier by way of chilis and stews. Chicken-and-dumplings are a Texas favorite too. However, for me, there's one dish that fits the bill when the weather gets cold: piping hot Fiesta Bake.

This amazing concoction is a Mexican twist on Shepherd's Pie, which is delicious in its own right. Many of you may already know the wonders of Fiesta Bake. You can't beat the taste, and it's so easy to make. If you're ready for something extra tasty to warm you up and please the whole family, I'm excited to share one of my favorite recipes.

Fiesta Bake

1 lb ground beef
1 cup chopped onion
1 pkg taco seasoning
1/4 cup water
1 can Rotel (drained)
1 can corn (drained)
1 can pintos, or other bean of your choice (drained)
1 2-1/4 oz can sliced black olives (drained)
1 pkg cornbread mix
1 cup shredded cheddar
1 4-oz can diced green chilies

  • In a medium skillet, brown the meat and onion. Add taco seasoning, water, and Rotel.
  • Bring to boil, reduce heat to low, and cook for 5 minutes, or until mixture is thickened.
  • Stir in beans, corn, and olives.
  • Spoon into an ungreased, 8-inch square baking dish.
  • Prepare batter for cornbread mix according to package. Stir in cheese and chilies.
  • Spread batter over meat mixture.
  • Bake at 350° for 35 minutes or until the crust is golden brown.
  • Makes about 6 servings

For a vegetarian option, use 1-1/2 cups of rice or lentils instead of meat. Another great thing about this dish is that the leftovers are just as delicious. Plus it freezes great. That way you can reheat this home-cooked comfort food whenever the weather takes a cold turn. I'm ready to dive into all sorts of cold-weather recipes.
